A classic pre-Prohibition cocktail made gin, fresh lemon juice, and raspberries producing a silky, frothy drink with bright citrus.
In cocktail shaker, muddle raspberries and thyme. Add gin, egg white, simple syrup, and lemon juice. Shake until mixture no longer sounds sloshy and you feel a lot of pressure. Add ice to fill shaker half full. Shake until well chilled. Strain into a coupe and dust top with cinnamon and garnish with lemon and thyme.
